Pumpkin Cheesecake Swirl Bread Recipe

Today we also made a delicious pumpkin, banana, cheesecake swirl bread. I guess it is kind of the idea of a banana bread but with enough pumpkin to overpower the banana flavor and a layer of cheesecake  in the center. It isn’t too dry and it tastes great, you can have it as a dessert or for breakfast or a snack. Basically it’s got pumpkin and it is delicious so you should try it out.

My friends and I have been baking all morning making a bunch of pumpkin stuff. So I finally have pictures for you as well! For the bread here are the ingredients you will need:

Pumpkin banana layer:

  • 2 ripe bananas
  • 1 cup of Pumpkin Puree
  • 1 egg, room room temperature
  • 6 tablespoons of butter, softened
  • 1 teaspoon of vanilla extract
  • 1/2 cup of Brown Sugar
  • 1/2 cup of granulated sugar
  • 1 1/2 cups of all-purpose flour
  • 1 teaspoon of pumpkin pie spice
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda

Cheesecake Filling:

  • 6 ounces of cream cheese, softened
  • 1 egg, room temperature
  • 1/2 teaspoon of vanilla extract
  • 1/3 cup of granulated sugar
  • 1/4 cup of all-purpose flour

Instructions:

Pre-heat the oven to 425 degrees Fahrenheit.  Butter a Pyrex dish  (9 x 5 inches) and set it aside.

Combine together all dry ingredients in a bowl.

In a separate bowl, mash bananas together with pumpkin, egg, butter and vanilla until all lumps are gone.

Stir together the dry and wet ingredients until smooth and well mixed.

Pour half the mix into the dish evenly spreading it to the edges of the dish and set it aside.

Cheesecake filling:

Beat the cream cheese and sugar together until light and fluffy.

Beat in the egg and vanilla until combined.

Beat in the flour and continue beating until no lumps remain.

Spread the cheesecake filling carefully over the contents in the dish making sure it is even as possible.

Spread the remaining half of the pumpkin banana mix over the top of the cheesecake filling. Smooth it over making sure it is even.

Bake for 50 to 55 minutes or until a toothpick comes out clean.

Let cool in the dish for 10-15 minutes before removing it to a wire rack to cook.

Now you can eat and enjoy it!

Side note your house is going to smell amazing when you are baking so try not to bake when starving. I hope you enjoy it and let me know what you think.
