I love pumpkin pie but I never make regular sized pie because either I eat too much or I have to cut it into enough servings per person for all the people I am making it for. This is why I like make mini pies everyone has the same size serving and you know exactly how many to make. Also I don’t want to tell some one I ate 4 mini pies because I will sound like a pig so I have more self-control.
To make the pies you will need the following ingredients:
- Mini Graham Cracker Pie Crusts
- 15 oz Pumpkin puree
- 2 Eggs
- 1 tablespoon Pumpkin pie spice
- 14 oz Sweetened condensed milk
- Whipped cream
Pre-heat the oven to 425 degrees Fahrenheit.
Mix together the pumpkin puree, condensed milk, eggs and pumpkin pie spice in a large bowl until it is smooth.
Pour the filling into the mini pie crusts.
Put into the oven on a baking sheet and bake for 15 minutes.
Then reduce the oven temperature to 350 degrees Fahrenheit and bake for another 20 minutes.
Let them cool for 30 minutes to allow the filling to set.
Refrigerate until ready to serve (before serving add whipped cream on top as desired)
This is by far the simplest yet most satisfying pumpkin pie recipe I have found after playing around with a few different ones. I hope you all enjoy it!
